Beef Daube (Beef Braised with Red Wine, Mushrooms and Tomatoes); Tortilla Soup; and Curried Lentils
Skills Covered in Class Include: Working with Spices and Aromatics; Selecting and Cooking Shellfish; Selecting and Braising Beef; Determining Meat Doneness; Working with Lentils and Dark Leafy Greens; Balancing Flavors.
During class students will sample all the dishes prepared by the chef.
